Punjabi Yakhni Pullao Masala
Packet Ingredients:
Salt, Fennel, Coriander, Red Chilli,
Cinnamon, Big Cardamom,
Green Cardamom, Cumin,
Black Pepper, Garlic, Clove, Ginger,
Caraway, Sugar, Carom, Bay Leaves,
Yakhni Flavoring,
Anti Caking Agent (Silicon Dioxide)
Mutton/Chicken 750g – 1 kg
Mehran Basmati Rice 750g (Soaked for 30 Minutes)
Onion (Medium) 3 pcs (1 Quartered, 2 Sliced)
Garlic (Cloves) 5 – 6 pcs
Ginger 1 pc (1 inch)
Yogurt (Whipped) 1 cup
Oil/Ghee 1 cup / 200g
Mehran Punjabi Yakhni Pullao Masala 1 packet – 50g

In a pan, add 3 – 4 glasses of water, meat, 1 quartered onion, ginger, garlic and half a packet of Mehran Punjabi Yakhni Pullao Masala. Cover and cook on medium heat until meat becomes tender. (For mutton add 6 – 7 glasses of water).

When 3 glasses of stock remains, take out meat and strain the stock in a separate pan, discarding the whole spices.

Heat oil/ghee, fry sliced onions until they become golden. Then take out 2 tbsp of onions and keep a side.

Mehran Punjabi Yakhni Pullao Masala, stir continuously and cook for 5 minutes.

Then add stock, boil on high heat and add soaked Mehran Basmati Rice. Now cover and cook on medium heat. When water is reduced, cook on low heat for 15 minutes. When rice is cooked, spread the remaining onion. Mix well and remove.
Serve with fresh salad and raita. (Garnish with slightly roasted almonds, cashew nuts and fried onions.)
Serving for 5 – 6 people.
